Healthy Grits RecipeIngredients:
1 cup grits
2 cans coconut milk
1/2 small onion
2 cloves of garlic
curry powder
saltEquipment: saucepan, knife, cutting board, spatula1) Chop onion and garlic then add to saucepan. Heat on medium until they begin to brown.
2) Add coconut milk and curry powder to saucepan, mix, then bring to a boil. **Be careful! This will go from barely bubbling to boiling over QUICK**
3) Stir in grits and lower heat to simmer for 10-15 minutes. Stir occasionally to keep from burning.
4) Remove from heat and add salt and/or additional curry to taste.
5) Enjoy!
